Citrus Rainbow Trout with Apple Beet Slaw
INGREDIENTS
For the Trout:
- 1 lb Riverence Rainbow Trout fillets
- 1 sliced orange
- salt, pepper, garlic to taste
For the Apple Beet Slaw:
- 1 chopped apple
- 1-2 julienned beets
- 4 cups salad greens
- 1 cup julienned carrots
- 1 tsp salt
- 1/2 cup orange juice
- 1/2 half lemon zest and juice
DIRECTIONS
- Line a baking sheet with foil or parchment paper. Place rainbow trout, skin side down. Season with garlic powder, salt, and black pepper. Top rainbow trout with a slice of fresh orange.
- Bake rainbow trout in 400 degree oven for 8-12 minutes, until fish is opaque and flaky.
- Meanwhile, assemble apple beet slaw. Mix orange juice, lemon zest, lemon juice in small bowl and set aside.
- Place salad greens, chopped apple, julienned beets, and julienned carrots in large bowl and toss. Pour citrus dressing over salad and lightly toss.
- Remove rainbow trout from oven. Remove skin, if desired. Serve along side salad and enjoy!
