Citrus Rainbow Trout with Apple Beet Slaw


For the Trout:

For the Apple Beet Slaw:

  • 1 chopped apple
  • 1-2 julienned beets
  • 4 cups salad greens
  • 1 cup julienned carrots
  • 1 tsp salt
  • 1/2 cup orange juice
  • 1/2 half lemon zest and juice
  1. Line a baking sheet with foil or parchment paper. Place rainbow trout, skin side down. Season with garlic powder, salt, and black pepper. Top rainbow trout with a slice of fresh orange.
  2. Bake rainbow trout in 400 degree oven for 8-12 minutes, until fish is opaque and flaky.
  3. Meanwhile, assemble apple beet slaw. Mix orange juice, lemon zest, lemon juice in small bowl and set aside.
  4. Place salad greens, chopped apple, julienned beets, and julienned carrots in large bowl and toss. Pour citrus dressing over salad and lightly toss.
  5. Remove rainbow trout from oven. Remove skin, if desired. Serve along side salad and enjoy!
